Preheat oven to 300°F. Line baking sheet with parchment paper.
Using an electric mixer, beat egg whites and baking soda until stiff peaks form.
In separate bowl, beat vegan cream cheese, coconut oil, egg yolks and salt until smooth.
Using spatula, carefully fold egg whites into cream cheese mixture.
Scoop mixture into six even discs on baking sheet. Bake 22 to 25 minutes, until golden.
