No-Bake Blueberry Lime Pie

Ingredients
Crust

  • cups full-fat heavy whipping cream
Instructions
  1. Grease 9-inch pie dish.
  2. In large mixing bowl, combine all crust ingredients and stir until well combined. Adjust water amount to reach a crust texture that can hold its shape. Crust should not crumble.
  3. Transfer crust into prepared pie plate. Press down evenly into bottom and sides of plate. Refrigerate while filling is prepared.
  4. In food processor or blender, combine filling ingredients, including soaked and drained cashews. Process for 5-8 minutes until smooth, stopping to scrape down sides as necessary.
  5. Pour filling on top of pie crust. Refrigerate for at least 2 hours.
  6. If desired, place clean mixing bowl and mixer attachments in freezer for 10 minutes. Beat whipping cream in chilled bowl for 6-10 minutes until light and fluffy. Before serving, top with cream.
