  1. Preheat oven to 375 degrees F.
  2. Coast cast iron skillet in olive oil. Arrange potato slices in single even layer.
  3. Season with garlic powder and 1/4 teaspoon salt.
  4. Over medium heat, cook potatoes 4 to 5 minutes, until tender.
  5. Meanwhile, whisk together egg, remaining salt and ground pepper. Mix in spinach and mushrooms. Pour over potatoes when done.
  6. Bake 12 to 15 minutes, until eggs are completely firm.
