Instructions
  1. Heat waffle iron. Spray inside with coconut oil cooking spray.
  2. In blender or food processor, combine all ingredients except coconut oil spray, maple syrup and walnuts; blend until smooth.
  3. Pour 1/4 cup of mixture into waffle iron; cook 2 to 3 minutes. Repeat until all batter has been used.
  4. To serve, pour maple syrup over waffles and garnish with chopped walnuts.
