Ravioli & Asparagus in a Creamy Mushroom Sauce

Ingredients
  • 12 oz. ravioli cheese or mushroom
  • 8 oz. baby bella mushrooms sliced
  • 5 garlic cloves thinly sliced
  • 1 cup asparagus cut on a bias
  • 1 cup chicken broth
  • 3 Tbsp. butter salted
  • 1 Tbsp. chopped parsley
  • 1/2 cup heavy cream
  • 1/2 tsp. dried oregano
  • 1/2 tsp. cracked pepper
  • 1/2 tsp. sea salt to taste
  • parmesan cheese
Instructions
  1. To big pot, add 4 inches of water. Bring to boil and add 2 big pinches of salt.
  2. In large pan over medium-high heat, add 1 Tbsp. olive oil and 2 Tbsp. butter.
  3. When butter is melted, add mushrooms, pinch of salt and pepper and cook 2 minutes.
  4. Add garlic, oregano and cracked pepper to the pan and incorporate into mushrooms. Cook 2 minutes.
  5. Add chicken broth, cream and parsley. Bring up heat and reduce sauce 3-5 minutes until thickened.
  6. To pot of boiling water, add ravioli and cook 3 minutes.
  7. Once ravioli is cooked, strain pasta and add immediately to the pan with mushrooms. Remove from heat.
  8. Sprinkle parmesan cheese in pan along with 1 Tbsp. butter. Mix well and taste for seasoning.
