  1. In large bowl, whisk flour, coconut sugar, baking powder, salt and graham crackers. Add egg and milk and combine well.
  2. Heat griddle or pan to medium-low heat. Add a little cooking spray then a knob of butter. Once butter is melted add about 1/4 pancake mix to the pan. Let pancakes cook until bubbles start to form before flipping.
  3. Break up chocolate bar into glass bowl or dish. Add a splash of oil and microwave for 30 seconds to melt.
  4. To build pancakes, spread on butter and top with toasted marshmallows and melted chocolate.
