  1. To create cucumber spirals, place cucumber between two chopsticks.
  2. Cut thin slices across the cucumber at a 90-degree angle. The chopsticks should prevent your knife from slicing all the way through. Turn cucumber over and place between chopsticks. Cut thin slices at a 45-degree angle. Repeat with all cucumbers, resulting in spiral shapes.
  3. Place spiraled cucumbers in large bowl and sprinkle with salt. Gently massage salt into cucumbers and let sit five minutes.
  4. Rinse with cold water 3-4 times to remove salt.
  5. In small bowl, whisk together coconut aminos, chili oil or flakes, rice vinegar, brown sugar, sesame oil, garlic and sesame seeds.
  6. Pour sauce over cucumbers, add scallions and gently mix.
  7. This dish is best served immediately.
