Ingredients
  • 8 small sweet potatoes or 6 large, cut into ½-inch-thick wedges
  • 2 Tbsp. avocado oil
  • Salt to taste
  • Pepper to taste
  • Parsley leaves for garnish
  • Baby spinach leaves for garnish
Sauce
  • ½ cup sour cream
  • ¼ cup cilantro chopped
  • 2 Tbsp. lime juice
  • ¼ tsp. honey
Instructions
  1. Preheat grill to low to medium heat.
  2. In bowl, whisk together sour cream, cilantro, lime juice, honey, salt and pepper.
  3. In mixing bowl, toss sweet potato wedges with avocado oil, salt and pepper.
  4. Place potatoes on grill and cook 6-8 minutes, or until slightly charred. Flip and repeat on other side.
  5. Plate wedges, drizzle on sauce. Serve sprinkled with parsley and spinach leaves.
Note: Feel free to use a pan on stovetop and follow the same steps!
