Citrusy Green Beans
[vc_row][vc_column][vc_column_text]Brighten your holiday feast with a citrus-spiked side. Green beans are blanched until tender-crisp, then tossed with a mouthwatering mix of orange and lemon juice and zest, creating a vibrant twist on a classic vegetable dish. It’s easy to add culinary sparkle to your celebration with this simple side that refreshes and impresses.

Citrusy Green Beans
- 4 Tbsp. olive oil (divided)
- 1 thumb-sized piece ginger (grated or diced)
- 2 cloves garlic (diced)
- Juice of 1 orange
- 1 tsp. orange zest
- Juice of 1 lemon
- 1 tsp. lemon zest
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- 2 lbs. organic green beans (stems removed)
- In sauté pan on low heat, add 2 tablespoons olive oil, ginger and garlic. Stir fry for 2 minutes until golden. Set aside.
- In large bowl, whisk together lemon zest and juice, orange zest and juice, 2 tablespoons olive oil, salt and pepper. Set dressing aside.
- Bring large pot of water to boil over high heat. Add green beans and cook until bright green and barely tender, about 2 minutes.
- Drian beans and shake off any excess water. Transfer to bowl with dressing. Add garlic and ginger. Toss well to combine.
