Whipped Feta Dip with Balsamic Strawberries

Instructions
  1. Preheat oven to 350 degrees F. Rinse strawberries and gently pat dry with a towel. Remove stems and cut large strawberries into quarters and small strawberries in half.
  2. In large bowl, combine balsamic vinegar and honey. Season with black pepper to taste. Add cut strawberries to bowl and gently toss to fully coat.
  3. Line baking sheet with parchment paper. Spread strawberries in single layer on baking sheet. Bake for 30 minutes.
  4. Meanwhile, make whipped feta. In food processor, combine feta, Greek yogurt, olive oil, and ground white pepper. Puree until smooth. Transfer to bowl, cover and refrigerate for 1 hour.
  5. When strawberries are done baking, cool for 5 minutes. Transfer to bowl, cover and chill.
  6. When ready to serve, transfer whipped feta to serving bowl. Spoon balsamic strawberries on top and garnish with a drizzle of olive oil, basil and freshly cracked black pepper. Serve with your favorite toasted bread.
