It’s music to your ears: pop a chip into your mouth and crunch, crunch, crunch. Potato, corn, even kale—as long as it’s crisp, you’ll take any chip. So why not fill your bowl with something outside the usual store-bought bag? Sliced thin and sprinkled with spicy chipotle powder, baked radishes – rich in vitamin C, potassium, folate and fiber – make a healthy alternative to deep-fried crunchy spuds. With a cooking time of just 10 minutes, they’re the perfect anytime snack-attack solution.

10-Minute Spicy Baked Radish Chips

Ingredients

1 lb. radishes, stems cut
2 Tbsp. extra-virgin olive oil
Juice of 1 lime
½ tsp. ground chipotle powder, or to taste

Directions

  1. Preheat oven to 350 degrees F.
  2. Slice radishes into thin “chips.”
  3. In a small bowl, combine olive oil, lime juice and chipotle powder and mix well.
  4. Place radish chips in large bowl, top with dressing and toss to coat.
  5. Arrange chips on baking sheet and bake 10-12 minutes, or to desired crispness.
