You could do the same old party song and dance. Get yourself ready, and then leave 10 minutes early so you can pick up pre-made chips and dip. It’s an easy answer to the “what do I bring?” question. But you’re better than that, which is why you should take it up a notch – like five or six notches. Instead of just serving up hummus, this party dip has layer up on layer of Greek favorites everyone will love (think feta, cucumber and more). No more excuses. Party-go like a champ!
Hummus
2 cans (15 oz) organic garbanzo beans
5 Tbsp. organic extra virgin olive oil
1 Tbsp. organic hemp seeds
1 organic garlic clove
¼ tsp. Himalayan pink salt
Ground black pepper to taste
Juice of ½ organic lemon
Layers
1 organic cucumber, diced
½ organic red onion, diced
1/3 pint organic grape tomatoes, quartered or diced
3 oz. organic feta cheese, crumbled
1/3 cup organic pitted black olives (optional)
Directions
- Prepare hummus in a food processor by blending all ingredients until smooth and well combined.
- In a medium-size baking or casserole dish, spread hummus to cover the bottom and create the first layer.
- Top hummus with the layer ingredients, making sure to carefully spread it all out.
- Serve with a bag of organic rosemary-flavored crackers or these homemade chips.
