Makes 8 pancakes

Ingredients
2 eggs
2 Tbsp. water or nut milk
4 tsp. olive oil
1 cup Simple Mills Gluten-Free Pancake Mix
Maple syrup
Berries (optional)
Hemp seeds (optional)

Directions

  1. In mixing bowl, whisk together water or nut milk and oil. Add pancake mix and whisk until thoroughly combined.
  2. Heat lightly-oiled pan over medium heat. Add about two tablespoons batter for each pancake. Once bubbles appear, after 1-2 minutes, flip pancake and cook another 1-2 minutes. Transfer to plate. Repeat with remaining batter.
  3. When ready, use heart-shaped cookie cutter or knife to make heart-shaped pancakes. To serve, drizzle with maple syrup and top with berries and hemp seeds.
