Zesty Zucchini Casserole

Got a case of the casseroles? If you love making casseroles for dinner because they’re convenient, quick to assemble and easy to clean up, you’ll want to add this simple zucchini casserole to your repertoire. Make a big batch of Herb Cashew “Cheese” Spread ahead of time and slather it between layers of zucchini and spinach. For an extra nourishing and hearty dish, add hemp protein, tofu or jackfruit before baking. Enjoy!

Ingredients

6 large organic zucchinis, sliced lengthwise
1 cup Vegan Cashew Cheese Spread
3 cups organic spinach
1/2 cup chopped green onions
1/3 cup fresh basil, chopped
2 tsp. oregano
Crushed red pepper, to taste
Pinch sea salt
2 cups hemp protein (can sub hemp tofu or jackfruit), optional
2 cloves of garlic, diced, optional

Directions

  1. Preheat oven to 325 degrees F. Lightly oil 9×13-inch glass baking pan.
  2. Lay zucchini strips to cover pan. Top with a layer of cashew cheese, spinach, green onions and protein, if using. Repeat until pan is full.
  3. For the final layer, add basil, spices, garlic if using, basil and additional cashew cheese.
  4. Bake for approximately 35 minutes or until bubbly.
