This lemon curd recipe features monkfruit extract, a natural, calorie-, carb- and sugar-free sweetener that comes from a small, green Asian melon. Vegan butter and coconut butter allow you to skip the eggs and butter in traditional lemon curd, making this spread and topping totally vegan and totally guilt-free. Pucker up!

Sugar-Free Lemon Curd

					Ingredients
- 2 lemons juiced
 - 2 Tbsp. lemon zest
 - 1/4 cup coconut butter
 - 1/3 cup vegan or soy-free butter such as Miyoko’s Vegan Butter
 - Powdered monkfruit to taste
 
Instructions
- 
										In stainless steel pan over medium-low heat, use a wooden spoon to stir all ingredients into a smooth consistency and bring to a slight simmer.
 - 
										Remove from heat and let cool.
 - 
										Store refrigerated in an airtight jar or freeze.
 
Recipe Notes
Remember, when adding monkfruit, less is more. A pinch of monkfruit is equal to about 1 tsp. sugar.
