The artichoke has been utilized for its healthful benefits since the 4th century B.C. Today it is considered an antioxidant, and some reports suggest it supports healthy digestion, liver function, and cholesterol levels already within normal range.

Artichokes are an excellent source of dietary magnesium, fiber, and the trace mineral chromium.

Artichokes are also full of vitamins A and C, folic acid, biotin, niacin, riboflavin, thiamine, potassium and trace mineral manganese.

So toss them in your pasta or salad, enjoy them roasted with lemon juice and extra-virgin olive oil…or take a supplement. What’s not to “heart” about this nutrient-dense food?
