If you’re sick of souped-up smoothies or too time-strapped for enhanced pancakes, this meal-in-a-jar is a creative, quick solution. Like overnight oats – minus the heavy grains – it’s prepped the night before, with fresh berries, raw nuts, chia seeds and honey swirled together for a chewy, naturally sweet, satisfying start to your day.
Ingredients
1 cup coconut milk (or nut milk of choice)
 1 Tbsp. raw walnuts
 3 Tbsp. organic chia seeds
 1 Tbsp. goji berries
 1 Tbsp. honey 
 1/3 cup mixed berries (frozen or fresh)
 Directions
- In glass jar, combine all ingredients and let sit for 15 minutes.
- After 15 minutes, stir mixture. Screw on lid and refrigerate pudding overnight.
- If desired, serve pudding with additional, fresh berries.
