Case in point, the breakfast biscuit should not be underestimated. This warm, doughy treat crosses culinary cultures and is far from a basic bread. With speckles of green shining through their golden tops, these dairy-free chive biscuits will always over-deliver — no matter who’s around the table.

Ingredients

3/4 cup spelt flour
3/4 cup  unbleached all-purpose flour
3/4 cup unsweetened almond milk
1-1/2 Tbsp. apple cider vinegar
1 Tbsp. honey
3 Tbsp. Nutiva Organic Coconut Shortening
1/2 tsp. salt
1 1/2 tsp. dried parsley
1 Tbsp. baking powder
3 green onions (green part only), thinly sliced

Directions

  1. Preheat oven to 400 degrees F and grease a 9-inch baking sheet with non-stick cooking spray.
  2. In a small bowl, mix together apple cider vinegar, almond milk and honey. Set aside for about 15 minutes.
  3. In a medium bowl, mix together flours, baking powder, salt and parsley.
  4. Using a fork, blend in coconut shortening and green onions.
  5. Pour milk mixture into flour mixture and stir until combined.
  6. Lightly dust a piece of wax paper with flour, roll dough out to make a 1-inch thick round.
  7. Using a cup or cookie cutter, cut into 10 biscuits, about 1/4-inch thick. Place each on prepared baking sheet and bake 16-18 minutes, or until biscuits rise and turn slightly golden on top.
