Gluten-Free Brownies

Peanut Butter Swirl Brownies

Makes 16 servings

Ingredients

Brownies

21 oz. package gluten-free brownie mix
¾ cup warm water
¾ cup butter, melted
1 egg

Peanut Butter Frosting

½ cup powdered sugar
¾ cup creamy peanut butter
¼ cup salted roasted peanuts, chopped
½ tsp. vanilla extract
¼ cup butter, melted
¼ tsp. salt, optional (use if using unsalted peanut butter)

Directions

  1. Preheat oven to 350 degrees F. With non-stick spray, coat a 13×9” baking pan.
  2. In a large bowl, combine brownie mix with water, butter and egg. With an electric mixer, beat batter until combined. Pour batter evenly into prepared pan, smoothing out the top.
  3. In a separate bowl, combine all ingredients for peanut butter swirl, gently folding in the peanuts last.
  4. Put heaping scoops of the peanut butter frosting along the top of the brownies. Use a butter knife to run and swirl the peanut butter into the brownies.
  5. Bake for 25 minutes, until a toothpick comes out clean.
