Rushing to a potluck and picking up a store-made dessert on the way is not how you should celebrate the season. If you want to impress your friends (and procure an invite to the next shindig), you’re going to need a treat that’s delicious and memorable. You can’t go wrong with these crowd-pleasing chocolate peppermint truffle bites with rich, refreshing flavor and bite-sized convenience. Bonus? They’re quick and easy to make, so they’ll be ready before you run out the door.

Mo’s Mintylicious Chocolate Bites

Ingredients

1 cup coconut flour
1 cup almond meal flour
1 cup unsweetened shredded coconut
¼ cup Pascha 85% dark chocolate chips
1 Tbsp. Vitacost raw cacao powder
1/3 cup coconut oil
2 tsp. vanilla
3 drops peppermint flavor or extract
Liquid stevia, to taste, optional

Directions

  1. In a large bowl, mix together coconut flour, almond meal and shredded coconut. Set aside.
  2. In a non-stick skillet over low heat, melt the chocolate, cacao powder, vanilla and coconut oil. Be careful not to boil. Stir in peppermint flavor and stevia (if desired).
  3. Fold melted chocolate mixture into the dry ingredients.
  4. Coat your hands with coconut oil form the dough into bite-size treats. Place on prepared baking sheet.
  5. Enjoy immediately or refrigerate and served chilled. Store leftovers (if there are any) if the freezer and fridge up to two weeks.
