Cinnamon Parsnip Crisps

You started the day with a protein smoothie and enjoyed a spring green salad for lunch. You’re feeling great and are happy with the choices you’ve made. It would be a shame to ditch your diet when an afternoon slump leads to a case of the munchies. Instead of sodium- and preservative-packed potato chips, help yourself to parsnip crisps coated with cinnamon and parsley. These baked bites will keep your food goals in check.

Cinnamon Parsnip Crisps

Ingredients

4 large parsnips, sliced into thin rounds
Coconut oil spray
1-2 Tbsp. fresh parsley, chopped
1-2 tsp. cinnamon
Pink sea salt, to sprinkle

Directions

  1. Preheat oven to 375 degrees F. Line a baking sheet with foil or wax paper.
  2. In a large bowl, mix together all ingredients, making sure each parsnip round is well coated.
  3. Spread out rounds evenly on baking sheet.
  4. Bake for 20-25 minutes or until crispy.
