Gluten-Free Roasted Peach Cobbler

Gluten-free baking often requires measuring out numerous flours to achieve desired consistency or texture. It can be an arduous process–with quite a bit of cleanup! Instead of relying on a variety of flours, this recipe uses a single gluten-free blend that acts as a 1-to-1 replacement for traditional white flour. You can whip up your favorite peach cobbler with minimal hassle, fewer dishes and no tummy aches!

Gluten-Free Roasted Peach Cobbler

Ingredients

1 cup Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour
1-¼ cups almond milk
½ cup + 1 Tbsp. sugar, divided
2 Tbsp. apple cider vinegar
1 Tbsp. baking powder
20 drops vanilla stevia (can sub with 4 tsp. sugar)
Pinch of salt

Peaches

2 large peaches, quartered and sliced (approx. 3 cups)
1 Tbsp. dairy-free butter

Directions

  1. Preheat oven to 375 degrees F.
  2. In an 8 x 8-inch baking dish, combine sliced peaches and butter. Bake for 30 minutes, stirring halfway through.
  3. Meanwhile, in a large mixing bowl with a wire whisk, whisk together flour, ½ cup sugar, baking powder and salt. Mix in milk, vinegar and stevia.
  4. Remove roasted peaches from oven. Spread them out evenly in the dish, if necessary.
  5. Coat sides of baking dish with non-stick spray. Pour batter over peaches and bake all together for 1 hour.
  6. Serve warm or cold, topped with remaining tablespoon of sugar and vanilla ice cream (diary-free, if necessary).
