Chili-Lime Calabash Squash Fries

If you’re looking to make something a little different, experiment with this zesty side dish. In place of ordinary potato fries, pair your burger, wrap or sandwich with a batch of these crispy green strips made from calabash squash. This green fruit (commonly referred to as a vegetable) is known as the “bottle gourd” for its unique shape and is used in a variety of delicacies from around the world.

Ingredients

1-2 large calabash squash
Coconut oil spray
Chili powder
Juice of 1 lime
Cayenne pepper, optional
Pinch sea salt, optional

Directions

  1. Slice squash into thin strips. Lightly coat skillet with olive oil spray.
  2. Over medium-high heat, arrange squash strips in pan and coat top side of strips with oil, lime juice, chili powder and sea salt. For extra spice, add a dash of cayenne pepper. 
  3. Pan-fry each side until desired crispiness.
