The add-in you thought was enhancing the nutritional content of your yogurt or smoothie bowl is actually just a big bag of sugar. But, fret not, fearful foodie. By making this superfood granola, you can actually get the boost you were hoping for. Bonus? This batch features pili nuts, exotic nuts loaded with healthy fats and protein.
Ingredients
1 cup pili nuts
1/2 cup unsweetened shredded coconut
1/4 cup chia seeds
2 Tbsp. unrefined extra virgin coconut oil, melted
1/3 cup buckwheat groats
1/4 cup hemp seeds
Directions
- Preheat oven to 350 degrees F. Lightly oil baking sheet.
- In a mixing bowl, combine all ingredients, evenly coating ingredients with melted coconut oil. Add more coconut oil if desired.
- Place on prepared baking sheet and bake 8-10 minutes until lightly toasted.
- Serve as a snack or use to top smoothies, bowl, salads, casseroles or desserts.
