Grilled Kale Caesar Salad

All hail kale! Your regular Caesar salad needs an upgrade, so swap the romaine for nutrient-rich kale. Give it a flavorful boost by throwing it on the grill instead of eating it raw. And, instead of tossing the greens in foul-smelling fishy and eggy dressing, you’ll massage the pre-grilled leaves with a zesty vegan mixture of olive oil, nutritional yeast and fresh lemon juice. Dig in!

Ingredients

2 large bunches of organic dinosaur kale, torn into large pieces
3 Tbsp. extra virgin olive oil
2 Tbsp. nutritional yeast
Juice of 1/2 lemon
Freshly ground black pepper, to taste
Pinch sea salt, to taste

Directions

  1. In small bowl or jar, combine oil, nutritional yeast, lemon, pepper and salt until thoroughly combined.
  2. Gently and generously massage dressing into kale, careful not to break leaves into small pieces that will fall through grill.
  3. Grill until you reach desired texture.
  4. Serve immediately.
