Agave-Dijon Mustard Chicken

What’s the simplest, yet most-satisfying dinner you can whip up on the fly? You guessed it: chicken. Though the kid in you may instinctively dream up the days of chicken fingers, this recipe puts a twist on tradition. Instead of a basket of fried tenders with a side of honey-mustard, you’ll bake up a juicy main course with a sweet-and-tangy marinade. Raw agave nectar subs in for honey to create a flavor so spot-on, you’d wish Mom would’ve thought of this years ago.

Agave-Dijon Mustard Chicken

Ingredients

1 Tbsp. agave
2 Tbsp. unsweetened vanilla almond milk
⅛ cup Dijon mustard
2 boneless, skinless chicken breasts

 Directions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, stir together agave, almond milk and Dijon mustard.
  3. Brush the mixture onto both sides of each chicken breast. Allow to marinate for 10 minutes.
  4. Bake for approximately 30 minutes, or until cooked through. Serve and dig in!
