Almond-Hugging Bear Protein Cookies

Makes 12 cookies
Macros per serving: 66 calories | 4 g fat | 3 g carbs | 3 g protein | 2 g sugar | 1 g fiber

Ingredients

12 whole almonds
1/3 cup almond butter
¼ cup vanilla rice protein powder
1 Tbsp. maple syrup
1 Tbsp. filtered water
1 tsp. non-alcohol vanilla
Pinch of sea salt

Directions

  1. Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper.
  2. In a large bowl, combine almond butter, maple syrup, water, vanilla and salt. Add protein powder and mix well to form a dough. Add additional water by the teaspoon, if needed.
  3. Roll out dough onto parchment paper. The dough should be flat and thick but large enough to make 12 cookies. Freeze dough for 5 minutes.
  4. Remove dough from freezer. Cut out bears, fold the arms of each around an almond and place on cookie sheet.
  5. Using a toothpick, poke small holes in each bear’s head for eyes and nose.
  6. Bake for 10-12 minutes until golden brown and firm.
