Almond-Hugging Bear Protein Cookies
Makes 12 cookies

Ingredients
12 whole almonds
1/3 cup almond butter
¼ cup vanilla rice protein powder
1 Tbsp. maple syrup
1 Tbsp. filtered water
1 tsp. non-alcohol vanilla
Pinch of sea salt
Directions
- Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper.
- In a large bowl, combine almond butter, maple syrup, water, vanilla and salt. Add protein powder and mix well to form a dough. Add additional water by the teaspoon, if needed.
- Roll out dough onto parchment paper. The dough should be flat and thick but large enough to make 12 cookies. Freeze dough for 5 minutes.
- Remove dough from freezer. Cut out bears, fold the arms of each around an almond and place on cookie sheet.
- Using a toothpick, poke small holes in each bear’s head for eyes and nose.
- Bake for 10-12 minutes until golden brown and firm.
