Apple Pie-Peanut Butter Quinoa Parfait

Breakfast or dessert? You decide. A parfait is a fun way to start the day, with colorful layers and multiple mingling textures to perk up your senses and pack in early morning nutrition. Yet, creamy peanut butter and apple pie flavor make this healthy stack a seriously delicious after-dinner treat. Like fun-to-make overnight oats, you get in a serving of grains with chewy, nutty-tasting quinoa. Only this creation doesn’t have to sit refrigerated overnight before eating. Just scoop in the ingredients and start spooning!

Apple Pie-Peanut Butter Quinoa Parfait

Serves 1

Ingredients

½ apple, chopped
1-2 Tbsp. unsweetened applesauce
1 Tbsp. peanut flour
1/8 cup non-fat Greek yogurt
¼ cup quinoa
½ cup + 1/8 cup unsweetened almond milk
½ tsp. cinnamon
½ tsp. vanilla extract

Directions

  1. In sauce pan, combine quinoa, ½ cup almond milk, cinnamon and vanilla extract in sauce pan over medium heat and bring to a boil. Reduce heat to low, cover and simmer until almond milk is absorbed.
  2. Add 1/8 cup almond milk and stir quinoa for several minutes. Remove pan from heat and cool quinoa in refrigerator.
  3. For peanut butter layer, mix together peanut flour and Greek yogurt.
  4. Assemble parfait in container of choice, layering quinoa, applesauce and peanut butter layers to top and topping with chopped apples.
