Liven up your plate by putting a sassy spin on your favorite sandwich. These grilled cheese sammies are seasoned with chipotle and cayenne pepper for extra personality and gently crisped to perfection with spice-infused butter.

Between the slices, you’ll layer on cool avocado, cilantro, cheddar cheese and ripe tomatoes for a medley of colors and flavors resulting in a new and exciting grilled cheese experience.

Not a fan of dairy? Make it vegan by swapping butter and cheese for non-dairy options. For the ultimate fancy lunch, serve it with creamy, gluten-free vegan tomato soup.

Homemade Gourmet Southwest Avocado Grilled Cheese Sandwich with Spice-Infused Butter |

4 slices multigrain bread
4 oz. organic butter, softened
1/2 tsp. Frontier Ground Chipotle
1/2 tsp. Frontier Ground Cayenne
1/2 tsp. Frontier Garlic Powder
1/2 tsp. Frontier Ground Cumin Seed
1/2 tsp. Frontier Ground Coriander Seed 
4 slices cheddar cheese 
4 slices organic tomatoes
1/4 tsp. Frontier Cilantro
1/4 tsp. Frontier Parsley Flakes
Frontier Fine Grind Black Pepper, to taste
Frontier Sea Salt, to taste
1 ripe avocado, sliced

1. In small bowl, combine butter, chipotle, cayenne, garlic powder, cumin and coriander to form a compound butter. Spread butter on one side of each slice of bread.

2. On panini press or grill pan, arrange 2 slices of bread, buttered side down. Place one slice of cheese on each slice. On one slice, layer on tomato, season with cilantro, parsley, salt and pepper. Top with avocado slices and repeat seasoning. Top with second slice of cheese and bread, buttered side up.

3. Cook until desired crispness and serve. (Note: Cooking until the bread is just golden and cheese is just melted will leave the tomato and avocado more firm.)
