Banana Nut Protein Waffles

Bananas gone bad. Next to over-ripe avocados, it’s the worst fruit fiasco your kitchen could face. Okay, that may be an exaggeration, but regardless, it’s an issue that needs a solution. So here it is: Banana Nut Protein Waffles. They’re fluffy like the classic muffin, yet somehow sweeter and more nutritious. The nutritious part is primarily due to the nutty flavored brown rice protein powder. The sweeter side comes from those browning bananas. Combine the two (and a few other ingredients), and all of your problems are solved.

Breakfast Recipe: Banana Protein Waffles

Banana Nut Protein Waffles

Serves 1
Macros per serving: 257 calories | 23 g protein | 31 g carbs | 5 g fat | 5 g fiber

Ingredients

½ banana, preferably very ripe
1 scoop brown rice protein powder
1/3 cup oats
1 Tbsp. granulated stevia
1 tsp. banana extract
½ tsp. vanilla extract
½ tsp. baking powder
2 egg whites
1 Tbsp. chopped walnuts
Pinch of salt

Directions

  1. Coat a waffle iron with non-stick cooking spray and turn on to medium heat.
  2. In a blender, add all ingredients, except walnuts, and blend until smooth. Stir in walnuts.
  3. Pour batter in warm waffle iron and cook 3-5 minutes, or until golden brown.
  4. Take out waffle and top with sliced more sliced banana and walnut pieces.
