Basil Pesto with Hemp Seeds
Ingredients
½ cup hulled hemp seed hearts
1 cup packed fresh basil leaves, rinsed and dried
½ cup grated Parmesan cheese
¼ cup extra virgin olive oil
½ tsp. salt
2 cloves garlic, minced
Directions
- In a food processor or blender, process hemp, basil, cheese, garlic and salt and puree.
- Slowly add in olive oil and continue to process for 2-3 minute, until the mixture has become a smooth paste.
Tips
- This pesto can be stored in the fridge for up to 1 week.
- Serve as a sauce for pasta, pizza or rice, a dressing for salads, a spread for sandwiches or a dip for crackers and vegetables.
