Brown rice hot cereal is a breakfast staple in my house. It’s naturally delicious on its own, but I doctor mine up with protein-packed ingredients to give it extra staying power. I rely on natural sweeteners like raw coconut crystals rather than artificial sugar substitutes. I always have fresh fruit on hand, and I’ll chop up and toss in whatever’s in my kitchen.

Ingredients
1 cup brown rice hot cereal
1 to 2 scoops egg white protein powder (vanilla flavor)
3 cups unsweetened almond milk
Raw coconut crystals
1/4 tsp. Himalayan fine salt crystals
Directions
In a large saucepan, bring almond milk and salt to a boil. (Note: Add salt while the almond milk is still cold.) Stir in cereal. Reduce heat and simmer, stirring occasionally for about 2 minutes, or until slightly thin (cereal will thicken substantially later). Turn off heat and stir in protein powder. Add coconut crystals to taste. Cover and let stand for a few minutes before serving.
Serves 4. 208 calories, 10 grams of protein, 35 carbs, 3 grams of fat.
