Takeout is never your first choice for a healthy dinner, but your scheduled is jam-packed and there’s no time to cook a full meal. If only you could throw food into a pot and come back in an hour to a delicious home-cooked meal. This recipe allows you to do just that! Toss vegetables into a pot with broth and let it all simmer together. In 60 minutes, you’ll have a tasty soup that’s just waiting for you. Now, if the table would set itself, preparing dinner would be a completely hands-off experience… We can dream, can’t we?

Carrot Ginger Soup

Ingredients

2 cups vegetable stock
4 large carrots
1 medium onion, chopped
Juice of 1/3 lemon
1/3 cup green onion, chopped
1/3 cup fresh parsley, chopped
2 Tbsp. extra virgin olive oil
1 clove garlic, diced
½ tsp. ginger root
½ tsp. turmeric
Freshly ground black pepper, to taste
Cayenne pepper, optional, to taste
Sea salt, optional, to taste

Directions

  1. In a slow cooker or in a pot on the stove, bring the vegetable broth to simmer, add the remaining ingredients and cover.
  2. Cook over low heat for at least one hour.
  3. Taste and adjust seasonings, if necessary.
