Carrot Ginger Soup
Ingredients
2 cups vegetable stock
4 large carrots
1 medium onion, chopped
Juice of 1/3 lemon
1/3 cup green onion, chopped
1/3 cup fresh parsley, chopped
2 Tbsp. extra virgin olive oil
1 clove garlic, diced
½ tsp. ginger root
½ tsp. turmeric
Freshly ground black pepper, to taste
Cayenne pepper, optional, to taste
Sea salt, optional, to taste
Directions
- In a slow cooker or in a pot on the stove, bring the vegetable broth to simmer, add the remaining ingredients and cover.
- Cook over low heat for at least one hour.
- Taste and adjust seasonings, if necessary.
