Put on your heels because we’re having caviar! Made with steamed carrots, smoked paprika, cumin, garlic and lemon, this better-for-you carrot “caviar” is spicy, smoky and sweet. Puréed and served on toasted slices of French bread, it adds a charming touch of brightness and creativity to your next appetizer spread. Or make a batch, refrigerate and enjoy as a healthy snack all week long (it makes a great dip for crackers!)

Carrot “Caviar”

Ingredients

  • 1-½ lbs. carrots peeled and cut into 1-inch pieces
  • ¼ cup olive oil
  • ½ tsp. smoked paprika
  • 1 tsp. cumin
  • 1 garlic clove
  • 2 Tbsp. lemon juice
  • ½ tsp. salt to taste
  • Black pepper to taste
  • 1 baguette sliced into ¼-inch rounds

Instructions

  1. Preheat oven to 400° F.
  2. In medium saucepan, steam carrots until tender; drain and set aside.
  3. Meanwhile, arrange baguette slices on baking sheet and brush with olive oil. Bake until golden. Remove from oven, flip and brush other side with olive oil. Bake 4-6 minutes, until crisp and golden.
  4. In food processor, combine carrots with spices and lemon juice. Purée until smooth and creamy, adding a tablespoon of water at a time, as needed, to reach desired consistency. Season to taste with salt and pepper.
  5. Spread on toast to serve.
