“Cheesy” Shirataki Noodles with Shiitake and Kale

You can bet your shiitake you won’t find a dish more satisfying than this shirataki noodles recipe. Unlike other pastas, shirataki fettuccini has zero calories and is free of cholesterol. We’ve also added vegan cashew “cheese” for a comforting, creamy texture and cheesy flavor. Plus, it’s got a touch of gourmet goodness thanks to kale and shiitake mushrooms. Ingredients

1-2 pkgs. Miracle Noodle Shirataki Fettuccini, drained and rinsed
1/2 cup cashew cheese
1 Tbsp. unrefined organic coconut oil or avocado oil
1 cup kale or arugula
1 cup shiitake or chanterelle mushrooms, sliced
1 Tbsp. nutritional yeast
Crushed red pepper or cayenne, to taste, optional
Pinch sea salt

Directions

1. In a skillet over medium heat, combine noodles, cashew cheese, coconut oil and sea salt.

2. Sprinkle with nutritional yeast and crushed red pepper, if desired.

3. Stir in kale or arugula and mushrooms.
