Cherry & Goat Cheese Stuffed Sweet Potatoes
Serves 4
Ingredients
4 sweet potatoes
1 cup cherries, pitted/quartered
4 oz. goat cheese, crumbled
½ cup mint leaves
Extra-virgin olive oil
Sea salt
Ground black pepper
Directions
- Preheat oven to 400 degrees F.
- Use fork to pierce sweet potatoes. Arrange potatoes on parchment-lined baking sheet and roast for an hour to an hour and a half until tender.
- Cut potatoes in half lengthwise and top with cherries, cheese and mint.
- Drizzle stuffed potatoes with oil and top with sea salt and pepper and serve warm.
