Cherry & Goat Cheese Stuffed Sweet Potatoes

Serves 4

Ingredients

4 sweet potatoes
1 cup cherries, pitted/quartered
4 oz. goat cheese, crumbled
½ cup mint leaves
Extra-virgin olive oil
Sea salt
Ground black pepper

Directions

  1. Preheat oven to 400 degrees F.
  2. Use fork to pierce sweet potatoes. Arrange potatoes on parchment-lined baking sheet and roast for an hour to an hour and a half until tender.
  3. Cut potatoes in half lengthwise and top with cherries, cheese and mint.
  4. Drizzle stuffed potatoes with oil and top with sea salt and pepper and serve warm.
