A pepper made popular by a big burrito chain, the chipotle is a fiery little jalapeño that’s left on the vine until it’s fully ripened. It’s then picked, smoked and ground into a rich, red powder that can be used to spice up dressings, sauces, soups or even smoothies. Try it combined with lime and fresh cilantro in this kicked-up vinaigrette, perfect on a Mexican-style salad, as a taco topping or drizzled over pasta or rice.
Chipotle-Cilantro Vinaigrette
Ingredients
¼ cup extra virgin olive oil
¼ cup white wine vinegar
2 Tbsp. apple cider vinegar
Juice of 1 lime
1-1/2 Tbsp. Dijon mustard
¼ to ½ tsp. chipotle powder, to taste
Optional: chipotle seeds, to taste and desired heat
1-2 Tbsp. chopped fresh cilantro
Directions
1. Combine all ingredients in blender.
2. Pulse until blended.
