Chocolate Chip Cookie Blondies

You may have your mom’s chocolate chip cookie recipe memorized — but if you’re looking for something different, these blondies are the answer! Thanks to a few smart ingredient substitutions, nobody will know just how ‘healthified’ these treats really are. I guess you could say the (blondie) joke’s on them!Recipe: Chocolate Chip Cookie Blondies
Ingredients:

2 cup whole wheat flour
1 cup oat flour
2/3 cup stevia
1/2 cup date paste or maple syrup (To make date paste, place 20 pitted dates in hot water, cover and let sit 3 hours. Strain, rinse and toss into a blender with 1-2 Tbs water until pureed.)
2 large eggs
1 cup applesauce
1/2 cup unsweetened almond milk
2 tsp. vanilla extract
1 1/2 tsp. baking powder
1/4 cup almond butter
1/2 cup chocolate chips

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, combine flours and baking powder.
  3. In a separate mixing bowl, combine date paste, eggs, stevia, applesauce, milk, & vanilla extract.
  4. Mix both very well and slowly add the dry ingredients into the wet ingredients.
  5. Once mixed, fold in the almond butter and chocolate chips.
  6. Spray a glass 8×8 baking dish with non-stick baking spray.
  7. Pour the batter into the baking dish and spread out evenly with a spoon.
  8. Bake for 25-30 minutes or until top is slightly browned. Allow to cool before cutting and serving!

Makes 16 blondies. Per serving: 162 calories, 26 g carbs, 5 g fat, 5 g protein, 7 g sugar
