Cinnamon Roll Cookies with Coconut Butter Icing
Ingredients
¼ cup almond flour
¾ cup + 1 Tbsp. oat flour
2 packets stevia
½ tsp. baking powder
cinnamon
¼ cup cinnamon roll coconut butter
½ tsp. vanilla extract
1 whole egg (use flax egg for vegan)
1 Tbsp. white chocolate coconut butter, for topping
Directions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix all cookie ingredients (except cinnamon and white chocolate coconut butter) until well combined.
- Roll out dough to about 1/8-inch thick. Add another tablespoon of oat flour if dough is too sticky. Sprinkle cinnamon over dough.
- Separate dough into 10 even strips and roll them up. Slightly flatten each cookie.
- Place cookies on prepared baking sheet and bake for 6-7 minutes.
- Drizzle with white chocolate coconut butter and enjoy!
