After a meal or before a big kiss (say on New Year’s Eve), you reach for that trusty pack of gum or a peppermint you picked up at a restaurant and stuffed in your purse. As a quick fix, those are great options. But chewing gum and mint-flavored candies lack a lot of appeal when it comes to taste and texture. That’s where these nifty peppermint rounds come into play…
Not only will these little patties freshen your breath for a memorable smooch, but they offer rich, delicate chocolate and creamy coconut for a dessert you won’t soon forget.
Clean Peppermint Rounds

Makes 12 rounds
Ingredients
1 cup stevia-sweetened dark chocolate chips (or cacao chips)
1 ½ cups unsweetened shredded coconut
¼ cup honey
2 Tbsp. coconut milk
2 Tbsp. coconut oil
½ tsp. peppermint extract
Directions
- In a small bowl, microwave chocolate chips until melted, about 20-30 seconds. Chips may not be completely melted when you remove from microwave, so stir until smooth. Just be careful not to over-heat, as chocolate will burn.
- In a blender, mix coconut, coconut milk, coconut oil, honey and peppermint extract, processing until a smooth paste forms.
- Shape the paste into round discs and dip into melted chocolate. Sprinkle with organic candy cane pieces, if desired.Place rounds on a paper-lined baking sheet and put in the freezer to set, about 20 minutes.
- When ready to eat, remove from freezer and enjoy – cheers to the New Year!
