These clever clover-shaped rolls are made even more special with the incorporation of roasted garlic and rich olive oil. Rolling the simple-to-make dough into balls and baking in a muffin pan creates fun, shaped rolls in a snap! They’re perfect for a St. Patrick’s Day celebration and beyond. You’ll use an almond and cassava flour flatbread mix that’s free of wheat, rice, corn, oats, barley, rye, millet, sorghum and spelt, but not free of flavor.

Instructions

  1. Preheat oven to 400 degrees F. Generously oil six wells of muffin pan.
  2. In mixing bowl, combine flatbread mix, oil, eggs and water and combine well. Add garlic and mix to distribute throughout.
  3. With wet hands, scoop out 1 tablespoon batter and shape into smooth ball. Place in well of muffin pan.
  4. Repeat until six wells of muffin pan hold three scoops of batter tucked side by side, for total of six rolls.
  5. Bake until light golden-brown, about 20 minutes. Cool 5 minutes before removing from pan and serving.
