Cocoa Chocolate Chip Muffins

Sometimes, we crave gourmet goodies covered in sprinkles that ooze with exotic-flavored chocolate. Other times, we feel like indulging on something simpler. These basic chocolate chip muffins give you the best of both worlds. Although they may seem pretty standard, this recipe combines just the right combination of ingredients to create a chocolaty treat that will rise above the rest.

Ingredients

1-1/4 cups Vitacost Gluten-Free Baking Flour
1/2 cup unsweetened cocoa powder
1/2 cup Simple Truth Organic Light Brown Sugar
3/4 cup milk of choice
6 oz. semi-sweet chocolate chips
2 large eggs
4 Tbsp. butter, melted
1 tbsp. vegetable oil
2 tsp. Simple Truth Organic Vanilla Extract
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. coarse salt

Directions

  1. Preheat oven to 350 degrees F. Line muffin tin with paper liners or lightly coat with cooking spray.
  2. In medium bowl, whisk flour, cocoa, baking powder, baking soda and salt. Set aside.
  3. In another medium bowl, lightly whisk eggs, then whisk in butter, brown sugar, milk, oil and vanilla.
  4. With rubber spatula, quickly fold wet ingredients into the dry. Just before batter comes together, fold in chocolate chips. (Note: Don’t mix batter in too much or muffins will be tough.)
  5. Evenly distribute batter among muffin cups (1/4 cup batter per muffin).
  6. Bake around 20-25 minutes or until a tester (you can use a butter knife) inserted in center comes out clean.
