If you’d like to finally have your morning “cake” and eat it, too, then you’ll go nuts for these Coconut-Almond Pancakes. You’ll fill up on sweet vanilla protein without a second thought about counting carbs.

Coconut-Almond Pancakes

Makes about 5 pancakes

Ingredients

2 Tbsp. coconut flour
1 scoop vanilla protein powder
1 Tbsp. shredded coconut
1 tsp. baking powder
1 tsp. vanilla extract
2 whole eggs

Directions

  1. In a large bowl, add all ingredients and mix until just combined. Do not over-mix!
  2. In batches, pour batter onto a skillet over medium heat and cook through. Repeat until all batter is used up, about 5 pancakes total.
  3. Top with chocolate syrup, shredded coconut and sliced almonds. Now enjoy!
