Homemade Macaroons with Oats & Honey Clusters

Ever bitten into a freshly baked macaroon? Perhaps you’ve tried your hand at making them! But we bet you haven’t gone as far as to tweak the recipe for a custom creation. Unlike its French rival, the easily alterable macaron, the macaroon leaves little room to explore new flavors, but a bunch of coconut and chocolate can get pretty repetitive after the first dozen (or so) cookies. Mix in KIND Healthy Grains to add a delectable crunch and sweet honey flavor to this traditional confection.

Makes 20 macaroons

Ingredients

1 cup (approx.) KIND Healthy Grains Oats & Honey Clusters with Toasted Coconut
1 Tbsp. coconut chips
1-1/4 cups dark chocolate chips
1/4 cup sugar
1 tsp. vanilla extract
1 whole egg
1 egg white

Directions

  1. In double boiler, simmer sugar and egg white until sugar dissolves. Remove from heat and mix in whole egg and vanilla.
  2. Stir in coconut chips and KIND Healthy Grains to egg mixture. Refrigerate for 3 hours.
  3. Preheat oven to 275 degrees F and line baking sheet with parchment paper.
  4. Using tablespoon, drop mounds of mixture 1 inch apart on baking sheet. Bake 10 minutes.
  5. In double boiler, melt chocolate.
  6. Dip macaroons in chocolate and place on parchment paper to cool.
