You’ve made appetizers, side dishes, main courses and desserts for the masses (including your picky aunt, who questions every ingredient). You’re done. But you still need to eat. Make this savory Cozy Lentil-Vegetable Soup as a quick-and-nutritious dinner. It’s so easy to prepare, with all the cooking carried out in a single soup pot! If you’re craving a more filling meal, simply add a cooked grain or some shredded meat.
Cozy Lentil Vegetable Soup
Ingredients
2-½ cups brown lentils
2 stalks celery, diced (½ cup)
1 medium onion, diced (1 cup)
1 large carrot, diced (½ cup)
1 tsp. salt
½ tsp. ground coriander
½ tsp. ground cumin
¼ tsp. ground cardamom
¼ tsp. black pepper
1 (15-oz.) can diced tomatoes (with juice)
8 cups vegetable broth
2 Tbsp. olive oil
Directions
- Rinse and sort lentils. Set aside.
- In a large pot, heat oil over medium heat. Sauté the diced vegetables and salt, about 5 minutes until the veggies are soft.
- Add the rinsed lentils to the pot, along with the tomatoes and juice, vegetable broth and spices. Cover and bring to a boil.
- Reduce heat and simmer for about 35 minutes, until lentils are tender.
