Even chopped fruit or a sprinkling of sugar can’t brighten up a batch of whole grains cooked badly. Coconut Lucuma Oatmeal
Ingredients
1/4-1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1 pinch Himalayan crystal salt
1 tsp. coconut flakes
1 tsp. chia seeds
1 tsp. hemp seeds
1 Tbsp.whole coconut butter
1 Tbsp. lucuma powder
1/2 cup whole oats
1 cup water
- In a small pot, cook oats in water according to package directions.
- When oats are almost done cooking, stir in coconut butter, vanilla, lucuma powder, chia seeds, hemp seeds and salt.
- Remove oatmeal from heat and stir in coconut flakes and cinnamon.
- Top with fresh fruit and a splash of your favorite non-dairy milk.
