Creamy Coconut Butter-Superfood Oatmeal

There’s no surer way to start the day disappointed than spooning into a bowl of dry, pasty or flavorless oatmeal. Even chopped fruit or a sprinkling of sugar can’t brighten up a batch of whole grains cooked badly. For the perfect texture and taste every time, try simmering your oats with pure, stone-ground coconut butter. Not only does it lend a richness, creaminess and sweetness (without added sugar!) like no other add-in, it’s packed with nourishing and energizing healthy fats that will put pep in your step and help keep your hands off the snacks before lunchtime.

Creamy Coconut Butter Superfood Oatmeal

Coconut Lucuma Oatmeal


1/4-1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1 pinch Himalayan crystal salt
1 tsp. coconut flakes
1 tsp. chia seeds
1 tsp. hemp seeds
1 Tbsp.whole coconut butter
1 Tbsp. lucuma powder
1/2 cup whole oats
1 cup water

  1. In a small pot, cook oats in water according to package directions.
  2. When oats are almost done cooking, stir in coconut butter, vanilla, lucuma powder, chia seeds, hemp seeds and salt.
  3. Remove oatmeal from heat and stir in coconut flakes and cinnamon.
  4. Top with fresh fruit and a splash of your favorite non-dairy milk.
