Creamy Zucchini Ribbon ‘Pasta’
Serves 4
Ingredients
1 lb. large zucchini
1 tsp. sea salt
1/4 cup Greek plain yogurt
1/4 tsp. black pepper
1/4 tsp. red pepper flakes
2 Tbsp. nutritional yeast
Directions
1. Using the julienne blade of a mandoline, slice zucchini into long, thin strips. Transfer zucchini to a large bowl; add sea salt and set aside for 20 minutes.
2. Squeeze zucchini to remove excess water; add remaining ingredients. Gently toss to combine.
3. Serve.
