Fried, fatty and full of calories—that’s probably what comes to mind when you think of onion rings. But the favorite snack doesn’t have to elicit guilt-ridden eater’s remorse—or, for that matter, an upset stomach. This healthy, tummy-friendly version, tossed in organic extra virgin olive oil and generously sprinkled with rosemary, is a far cry from the deep-fried, greasy onions you might find at sports bars or fast food joints. Make a batch for the week and eat them on their own, or use them to top salads and casseroles.

Healthy Baked Onion Rings

Crispy Baked Onion Rings

Ingredients

2 large onions of your preference
Extra virgin olive oil
Dried rosemary
Freshly ground black pepper, to taste

Directions

  1. Preheat oven to 350 degrees. Line a baking sheet with foil.
  2. Slice onions into thin rings and place on baking sheets. Coat with olive oil and sprinkle generously and evenly with rosemary. Add pepper.
  3. Bake for 30-40 minutes, until crispy to your preference.
  4. Enjoy as a snack or a topping for salads or casseroles.
