Most recipes that call for broccoli refer to the florets. You’ll chop off the head and discard the stalk. But isn’t that a lot of food waste? Maybe. But can you eat broccoli stalks? Why, yes, of course you can! The stalk is just as nutritious as the broccoli florets, so by tossing it you are throwing vitamins and minerals into the trash. The next time you use broccoli florets when cooking, reserve the stalk and whip up this healthy, delicious and crunchy broccoli slaw.
Ingredients
2 cups broccoli stalks, shredded into slaw
1 cup purple cabbage, shredded
1/3 cup fresh parsley, chopped
1/3 cup green onion, chopped
1/3 cup avocado oil or extra virgin olive oil
3 Tbsp. apple cider vinegar
Freshly ground black pepper
Pinch sea salt
1 cup slivered almonds, toasted
Avocado, diced and drizzled with fresh lime juice, optional
Shredded carrots, optional
Directions
- In a small glass container with a lid, combine oil, apple cider vinegar, pepper, sat and green onion. Mix or shake with lid to combine.
- In a large mixing bowl, added broccoli, cabbage and parsley. Toss dressing and mix well.
- Add almonds and diced avocado, if using.
